




Well we have just arrived home safe and sorta sound from our adventures in Snowy Portland Oregon. We saw enough snow in the last week for, well, a lifetime. Unfortunately I'm aware that there is more snow in our future (Alaska...) Yikes!
Jebb and I are both finished with flying...it was a nightmare of sorts, though not as bad as some had it. We weren't stranded or delayed (just 2.5 hours doesn't really count). But getting bounced around on EVERY flight did not fare well with me. Of course, Hunter slept through it all (lucky guy). I still can't figure out why they are charging for baggage. Wasn't that because of the high fuel costs, which now aren't so high? Oh and shall I mention $2 for a soft drink on the plane???
We enjoyed Christmas with family. We're very fortunate that Jebb has the ability to drive in snowy conditions because we did get to spend time with his grandparents as well. Unfortunately Jebb's cousins didn't make it over to his dad's on Christmas Eve, so we missed seeing them, but everyone else came. Hunter was thoroughly spoiled...anyone surprised??
But he did get to play in the snow (sorta) and I got to wear my boots that Jebb absolutely hates (he admitted they fared well in the weather)
We hope that all of you had a wonderful Christmas. We will be hopping the car on Tuesday and driving to Missouri for Betsey's wedding and to see my family for a few days!

Meal of The Week
Ok, so last night's recipe turned out to be a hit. Jebb rated it a "fix again" meal!
Shrimp, Tortellini and Spinach
4 Servings
1 Pkg. (9 oz) Refrigerated CheeseTortellini (I used Frozen)
1/4 Cup Kraft Roasted Red Pepper Italian with Parmesean Dressing (couldn't find so I used a sun-dried tomato with basil dressing)
2 cloves garlic
1 can (14-1/2 oz) no-salt-added diced tomatoes, undrained
3/4 lb. cooked cleaned medium shrimp or you can use a pound boneless chicken breast cut up into bite sized pieces
1 bag (6 oz.) baby spinach leaves
1/4 chopped fresh basil
2 tbsp. grated parmesan cheese
Cook tortellini in large saucepan as directed on package. Drain in colander; set aside. heat dressing in same pan on medium-high heat. Add garlic; cook 1 min. Add tomatoes and shrimp; mix well. Bring just to a boil. Stir in spinach (stir in all of it, looks like too much at first but once it wilts it will shrink up) Simmer 1 to 2 minutes or until spincah is wilted, stirring occasionally.
Stir in tortellini and basil; simmer, uncovered, 3 to 4 min or until sauce is thickened, stirring occasionally.
Serve topped with cheese.
Very easy meal to make only 350 calories per serving and 8 g of fat.

Cooking
So any of you that have been around Jebb and I know that Jebb likes to cook, mainly grill. So the majority of nights my husband lounges on the patio grilling our entree while I get stuck with salad and veggies. I really like to cook though, and experiment with new recipes. So Jebb has agreed to let me cook once a week. During that time I will be trying a new recipe every week that is healthy plus cost effective...I'll share new recipes that we have tried with everyone and let you know how they turn out!
